Kafta is what happens when a kebab is made properly. The meat is mixed by hand with parsley, grated onion, salt and a warm spice blend, which keeps it moist on the grill and gives it a fresh, herby lift you will not get from a plain burger patty. Pressed onto flat skewers, it cooks quickly over high heat and picks up a smoky char on every side.
